Pastry
- 150 grams all-purpose flour
- Pinch of salt
- 125 g unsalted butter, cut into small pieces
- Some water
- In a large bowl, whisk the flour with the salt. Using a pastry blender, cut in the butter until the mixture resembles coarse meal. Add water, sprinkle over the flour mixture. Stir with your hands to lightly blend, then squeeze gently until a dough forms.

- Preheat the oven to 350°.
- Heat a large skillet with some butter. Add a large handful of the fresh spinach (Sam's Club) and cook over moderately high heat, stirring, until wilted. Add some salt, pepper and nutmeg to taste.
- Add butter or spam to a 12-inch tart pan, roll out the pastry with your hands!
- Add spinach and arrange the goat cheese rounds on the spinach.(see picture)

- In a medium bowl, whisk 1/2 cup heavy cream, 2 eggs, salt and pepper.
- Pour the custard into the shell and bake for about 40 minutes, or until just set.
