Classic dish that my kids love! Easy to do, accompanied with a green salad that makes the perfect dinner on a winter night.
- Position rack in lower third of oven and preheat to 400 F
- Make the Béchamel sauce.
Ingredients - 5 tablespoons butter
- 4 tablespoons all-purpose flour
- 1 cup milk
- Pinch of ground nutmeg
- In a medium saucepan, heat the butter over medium-low heat until melted. Add the flour and stir until smooth. Over medium heat add the milk, whisking continuously until very smooth. Remove from heat;
- 3 egg whites - using electric mixer, beat egg whites in another large bowl until stiff but not dry. Add some salt
- You need cheese - Gruyere or Parmesan!
- In the bechamel, add the yellow eggs, mix while gradually sprinkling in Gruyère cheese. Add gently the egg whites. Transfer batter to prepared dish. Place dish in oven and immediately reduce oven temperature to 375 F. Bake until soufflé is puffed and golden brown on top and center moves only slightly when dish is shaken gently, about 25 minutes (do not open oven door during first 20 minutes). Serve immediately.
